Ingredients

  • 1 lb polska kielbasa sausage sliced into rounds or diagonal
  • 4 medium potatoes cubed
  • 2 cloves garlic minced
  • 3 tbsp olive oil
  • 1 tsp paprika
  • ½ tsp black pepper
  • ½ tsp dried thyme
  • salt to taste

Instructions

  • Heat 1 tbsp of olive oil in a large skillet over medium heat. Add the sliced kielbasa and cook for about 4-5 minutes until beautifully browned. The edges should be crispy and caramelized. Once done, transfer to a plate and set aside.
  • In the same skillet, add the remaining 2 tbsp of olive oil. Toss in the cubed potatoes. Season with paprika, thyme, black pepper, and a pinch of salt. Let them cook for about 15-20 minutes, stirring occasionally to ensure even browning.
  • In the final 2 minutes of cooking, stir in the minced garlic. The fragrance alone will have everyone circling the kitchen! Stir frequently to prevent burning.
  • Return the kielbasa to the skillet and mix well. To let the flavors combine, let everything heat through for 2 to 3 minutes.
