This recipe is the perfect one-pan meal that saves on cleanup and maximizes flavor. It's hearty enough for dinner but quick enough for a weekday lunch.

Instructions
Heat 1 tbsp of olive oil in a large skillet over medium heat. Add the sliced kielbasa and cook for about 4-5 minutes until beautifully browned. The edges should be crispy and caramelized. Once done, transfer to a plate and set aside.
In the same skillet, add the remaining 2 tbsp of olive oil. Toss in the cubed potatoes. Season with paprika, thyme, black pepper, and a pinch of salt. Let them cook for about 15-20 minutes, stirring occasionally to ensure even browning.
In the final 2 minutes of cooking, stir in the minced garlic. The fragrance alone will have everyone circling the kitchen! Stir frequently to prevent burning.
Return the kielbasa to the skillet and mix well. To let the flavors combine, let everything heat through for 2 to 3 minutes.
